Silk squash is a dark green squash with ridges that is delicate, a mildly sweet taste resembling zucchini, and a soft texture of silk - hence the name.  It is an excellent source of vitamin A, and a good source of fiber, vitamin B, vitamin C, manganese, potassium, copper, and magnesium. It lends its health benefits by clearing away toxins from the body through its anti-inflammatory and anti-biotic properties, lowering blood sugar levels, and for women, to restore absent menstrual flow and increase milk production in nursing mothers. The best way to serve is to steam, stir-fry, or in a curry, and it is a good substitute for zucchini or okra.
